Recipe: Whole Wheat Cheescake Muffins


Whole-Wheat Cheesecake Muffins

FILLING:
6oz of cream cheese, softened
1/4 c. sugar
1 egg
1/8 tsp. salt



CAKE:
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. sugar
1/3 c. canola oil
1 egg
1 tsp. vanilla
1 c. water




Beat filling until creamy. Combine dry ingredients in one bowl and wet ingredients in another. Add together. Spoon batter 1/2 way in cup. Spoon 1 slightly rounded tablespoon of filling over batter, then remaining batter to fill cup. Bake at 350 degrees for 25 minutes. Sprinkle with powdered sugar when cool. Makes 12 muffins.
